It celebrates the visit of the 3 wise men to the infant Jesus as told in the Matthew 2:1-11.

Ignore chichi!!
The three kings day is largely Spanish in origin and recognizes that if Jesus was born on christmas day the three kings would have taken a long time to travel there. Thus the Spanish have three kings day on the 6th January when their children get their presents!!
